History:
1789 Restaurant is the quintessential Washington dining experience. Chosen by readers of Gourmet magazine as one of America’s Top Tables, the restaurant is situated in a Federal period house in residential Georgetown. Its six dining rooms are beautifully decorated with American antiques, period equestrian and historical prints and Limoges china, providing an elegant setting for guests.
Chef Nathan Beauchamp is one of Washington’s rising culinary stars. Born and raised on the eastern shore of Maryland, Nathan is a graduate of the Culinary Institue of America and has worked under such notable chefs as Jeffrey Bubin of Vidalia and David Burke of New York’s Park Avenue Café. Beauchamp joined 1789 Restaurant in January after the departure of Ris Lacoste, and has made subtle but distinctive menu changes that reflect his ‘keep it simple’ approach allowing the best quality ingredients to define the dish. His work is complemented by the masterful wine pairings of William Watts.
1789 Restaurant takes its name from a significant year in Washington's history: In that year, its original site was purchased by Archbishop John Carroll, the founding father of Georgetown University; the Constitution of the United States was adopted; and Mayor Robert Peter incorporated the village of Georgetown. Though the restaurant was originally established to serve the community, today it welcomes patrons from around the world.
