Ingredients: 1 chopped sweet onion; 1 tbsp olive oil; 2 tsp minced garlic; 1 to 2 tsp red curry paste; 2 cans kidney beans; 1 can diced tomatoes; 1 can coconut milk; 1 tsp grated lime rind; 2 to 3 tbsp fresh lime juice; 2 tbsp sugar; 1 tsp salt; cooked rice Saute onion in olive oil over medium heat for 5 minutes; add garlic, and saute 1 more minute. Add red curry paste and saute 1 minute. Stir in kidney beans, diced tomatoes, coconut milk, lime rind, lime juice, sugar, and salt. Bring to a boil, reduce heat and simmer 30 minutes. Serve over rice.

Ingredients: 6 oz dried rice sticks; 2 pkgs stir fry veggies; 2 stalks bok choy; 1 tbsp vegetable oil; 2 tsp toasted sesame oil; 2 tsp minced garlic; 1 tbsp grated gingerroot; 3 tbsp tahini paste; 3 tbsp soy sauce; 1/2 tsp crushed red pepper; 2 green onions; 2 tbsp chopped unsalted peanuts Soak the rice sticks in enough warm water to cover for 10 to 15 minutes or until softened, drain and set aside. Heat vegetable and sesame oils in a large skillet over medium high heat. Add stir fry veggies, bok choy, garlic, and gingerroot and stir fry for 2 minutes or until vegetables are crisp tender. Add tahini paste, soy sauce and red pepper and toss ingredients to coat. Spoon vegetable mix over rice sticks and sprinkle with green onions and peanuts.

In a large bowl, combine greens, beans, zucchini, tomatoes, and vinaigrette. Add bread cubes and toss to coat. Sprinkle eac serving with parmesan cheese.

Place 1/4 cup of spinach mix down center of each tortilla, roll up and place seam side down in a greased baking dish. Pour heavy cream over tortillas with remaining cheeses. Cover and bake at 350 degrees for 20 minutes, uncover and bake an additional 10 minutes.
