We are J.P. and Marian Welch. At Justamere Tree Farm we produce pure artisanal New England maple syrup in the Berkshire Hills of Western Massachusetts. Each container of maple syrup which we produce is hand made right here on our energy-efficient farm, honoring centuries-old traditions.
Our sustainable sugaring operation is wood-fired and solar-powered. The evaporator, which we use to boil down the sap into syrup, is fueled with only locally harvested trees generated by maintenance in our sugarbush. In all that we do, we seek to manage the forest in a way that sustains it and our future as sugarmakers.
Sugaring is the first sign of Spring. In general, cold nights and warm days initiate the season, but we can’t always predict how nature will respond. When the sap begins to flow, clouds of sweet smelling steam float from sugar houses throughout the Berkshires.
