Not an unusual occurrence with the rising popularity of Craft Beer. However, this small brewery is a little different and once you drop by and visit, you'll see how the stars aligned to bring this unique new business to Historic Paris.
Local Business Man, Ralph Quillin (Quillin Leather & Tack, Inc) puts a new turn on Jack-of-all-trades. For most, a successful internationally know leather & tack shop would be quite enough, but for Quillin, the love of craftsmanship, old building, great beer AND the revitalization in Downtown Paris all seemed to be a puzzle worth putting together.
"We own five buildings on Main Street" Quillin said, "With the youngest of them being a 1896 mercantile". "Grand old structure with tons of character - all in need of a little TLC" he added. "The biggest challenge is not the building or the restoration, BUT the business it is going to house". "Our commitment to handcrafted excellence and our keen interest in Shop Local, Craft Beer and historic structures all collided like a perfect storm"
Almost 1800 sq feet house Rooster Brewing - brewery, tasting/tap room and retail space in a restored Main Street (circa 1880) mercantile. "Wow is the first word out of most folks mouths when they walk into the space" Quillin said. "All we did was respect the building and the architect's original intent and just strip off 100+ years worth of modernization."
